What Are Mycotoxins, Really?

Mycotoxins are the toxic compounds mould produces as it grows, and they can turn up on coffee cherries and beans if things aren't handled well. In coffee, there are two worth knowing about: Ochratoxin A and Aflatoxin B1, both produced by mould species that love warm, humid conditions. Which happens to describe most coffee growing regions.

Mould contamination can creep in at a few points along the way: out in the field, during drying, or later in storage and transport if moisture isn't kept in check.

Why We Bother Testing for Mould

Here's the honest version, no scare tactics needed.

In large amounts, Ochratoxin A (produced by mould) has been linked to kidney health issues. Aflatoxin B1 (also mould derived) has been linked to liver health risks with long term, heavy exposure. Neither is something you want building up in your body over time. Simple as that.
